Apricot Curry Pork Roast

Celebrate Easter with this modern take on a classic pork roast.

Ingredients:

1 3 lb. boneless pork-loin roast, trimmed and tied
1/2 tsp. salt
1/4 tsp. black pepper
3 Tbs. apricot preserves
2 Tbs. chopped dried apricots
2 Tbs. brown sugar
1 Tbs. lemon juice
1 tsp. grated ginger
1/2 tsp. curry powder

Directions:

Heat oven to 350 F. Sprinkle pork with salt and pepper. Place in large foil-lined roasting pan. In small bowl, combine remaining ingredients. Brush mixture onto pork. Cook in the oven for 65 to 75 minutes, or until meat thermometer register 160 F. Let rest 15 minutes before slicing.
